Cajun Style Red Beans and Linguica (for 4)
Place 4 bottles of ale in a cold stream
As usual, crisp up a sliced onion in a modest amount of olive oil.
Use 2 boxes of Zatarain's dried red beans and rice mix and follow directions (I know that's against your nature). It takes 25 minutes to simmer after the boil. You'll use that time to fry the sausages over a separate flame.
Serve the cook a glass of Salamandre Syrah to reward his diligence.
Add the onions and some crushed chili to the beans and rice until it achieves the heat you need for the chill of night.
Meanwhile, slice 2 hot linguica sausages into thin discs and fry until they get slightly blackened (It's supposed to be a Cajun thing, remember?).
Toss the sausages into the beans just before serving.
Open those beers and do what comes naturally.
