Winemaker's Notes

Back to Writings
We make wine for enjoyment, of course.  Before a pleasant glass of wine reaches the table, however, people make a lot of decisions and steps in the field and the cellar...enough to fill a demanding curriculum at UC Davis! Some of our customers are interested in the technical as well as the artistic elements of this craft, and I'm happy to share a few.  Some are widely established facts of the trade, while some others reflect our individual experience.  Enjoy with Salamandre.
