Mountain Paella

This will strike ultra light backpacking enthusiasts as excessive, but honestly, it’s not bad.  A meal for 3-4 guys weighs less than 2 pounds.
 
Cook a packet of Mahatma saffron rice according to the directions in your frying pan or largest pot.  It will take a half hour at altitude.  You can add extra saffron if you can somehow shoulder the weight.

Sauté an onion (or rehydrated flakes) or a shallot in olive oil, then toss in with the rice

When the rice is nearly finished, add some or all of the following…each of these come in wee 4 oz cans. Don’t add these too soon, as they’ll “mush up.”  5 minutes is enough
  • Baby clams
  • Baby shrimp
  • Baby oysters
  • Canned chicken breast

Seriously consider adding a thin-sliced Corralitos Market smoked sausage

Purists (and aren’t we all!) will want to lay in some fresh brook trout fillets
