Once again, start early by soaking up some dried mushrooms. Almost any will do…Shiitakes, chanterelles, and porcini all work great with this one. Save the water to cook the rice
Mahatma rice packets (there are good alternatives, too)—about 6 oz in a really durable package, pre mixed with spices. I like the saffron one, but Spanish Rice and Dirty Rice are great, too. Follow the directions. This will take a half hour at altitude, so ration your wine
You can do fine with plain brown rice, too. The quick-cook variety works OK, although the foreplay is better with the slower one
Meanwhile, as the rice is slowly cooking…
Sauté an onion, garlic, or shallot in olive oil…along with a handful of pine nuts
Add some slivered peppers (you choose warmth…Anaheims are nice intermediate ones, Jalapenos a little more assertive)
Add some Julienne sliced, sun-dried tomatoes
Put the pan aside until the rice is nearly done.
Mix them all together.
